At a time when fine dining seems\u00a0to be an uphill battle in Los Angeles, the Springville, NY, chef actually speaks with a European\u00a0accent when describing his dishes at a recent media dinner to announce his hiring. He calls his\u00a0style of cooking \u201cBorderless Cuisine\u201d which is a concept that can work for a restaurant\u00a0as long as the consistency of every dish remains high.<\/p>\n<figure id=\"attachment_1052\" aria-describedby=\"caption-attachment-1052\" style=\"width: 197px\" class=\"wp-caption alignnone\"><a href=\"http:\/\/perfectmealtoday.com\/wp-content\/uploads\/2015\/12\/url-2.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-1052\" src=\"http:\/\/perfectmealtoday.com\/wp-content\/uploads\/2015\/12\/url-2-197x300.jpeg\" alt=\"(Executive Chef Chris Emerling and owner Susan Disney Lord - Photo by Jill Weinlein)\" width=\"197\" height=\"300\" srcset=\"https:\/\/perfectmealtoday.com\/wp-content\/uploads\/2015\/12\/url-2-197x300.jpeg 197w, https:\/\/perfectmealtoday.com\/wp-content\/uploads\/2015\/12\/url-2.jpeg 198w\" sizes=\"auto, (max-width: 197px) 100vw, 197px\" \/><\/a><figcaption id=\"caption-attachment-1052\" class=\"wp-caption-text\">(Executive Chef Chris Emerling and owner Susan Disney Lord &#8211; Photo by Jill Weinlein)<\/figcaption><\/figure>\n<p>Emerling started out at 16 working at a ski resort in New York State before progressing\u00a0to the Pennsylvania Institute of Culinary Arts in Pittsburgh. That training eventually led\u00a0to the Michelin Star Chef Philippe Rochat in Switzerland. Further stints followed with\u00a0Benoit Violier, Joel Robuchon and Thomas Rode Anderson. One of the highlights of his\u00a0career was a fourth place finish in the 2015 KADI Cuisinier d\u2019Or of Switzerland. He moved\u00a0to Los Angeles in May 2015, and now his job is to create high end \u201cBorderless Cuisine\u201d\u00a0at the Bel Air Grill.<\/p>\n<p><a href=\"http:\/\/perfectmealtoday.com\/wp-content\/uploads\/2015\/12\/imgres-141.jpeg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1054\" src=\"http:\/\/perfectmealtoday.com\/wp-content\/uploads\/2015\/12\/imgres-141.jpeg\" alt=\"imgres-14\" width=\"275\" height=\"183\" \/><\/a><\/p>\n<p>Appetizers at the dinner were interesting to say the least and I was extremely surprised\u00a0to have a chilled Gazpacho soup, especially in November, that was served with dill weed\u00a0and avocado dots. A Farm Egg, poached for 4 minutes was also unique that was\u00a0accompanied by a tapenade and balsamic vinegar. Good to see that Burrata is still a\u00a0popular item, and Emerling\u2019s version is with a house made duck prosciutto, herb\u00a0poached mushrooms and wild arugula.<\/p>\n<p>He is keeping the Bel Air Classic Salad on the menu which has been around since 1997\u00a0with carrots, celery, corn, garbanzos, Parmigio-Reggiano cheese w\/a honey balsamic\u00a0dressing.
