CHARMING OUTDOOR SPOT LAUNCHES NEW COCKTAIL MENU<\/p>\n

Pasadena(Perfect Meal Today)11\/21\/16\/–Raymond 1886 in Pasadena is not in the hip and crowded downtown area of\u00a0city, but the location is a delight with a large outdoor dining area\u00a0perfect for winter nights. The menu can loosely be described as\u00a0American rustic, and I was also fortunate enough to visit the restaurant\u00a0on the night their new cocktail menu was being launched. Executive\u00a0chef is Tim Guiltinan and the Bar Manager is Peter Lloyd Jones.<\/p>\n

They have also added a new Pastry Chef in Raymond Morales and the\u00a0man behind the new and very progressive wine program is Maxwell\u00a0Leer. More about that later, but the ideal way to start a meal here is\u00a0the very fresh Artisanal Baguette ($7) with homemade butters that\u00a0will set you up right to follow up with the Octopus and Bone Marrow\u00a0Bruschetta ($17) w\/radish, carrot, tomatoes and toasted bread. This is a dish suitable for sharing as was the Indonesian Shrimp & Little\u00a0Neck Clams ($16) that are served in a Pale Ale and a Smoked XO\u00a0Sauce.<\/p>\n

A glance at the menu after my visit shows the creativity and versatility\u00a0of the chef with such starters as \u201cCoconut-Almond Cauliflower,\u201d which\u00a0is a half-head of the vegetable fully roasted and served with a sesame\u00a0and sweet chili sauce for $14. Equally enticing appears to be the \u201cPork &\u00a0Peaches,\u201d a crispy pork belly, green onion kimchi, peach emulsion, grilled\u00a0peach and white corn for $15.<\/p>\n

For a main course I went for the \u201cMarinated Young Lamb Chops,\u201d four\u00a0tender chops w\/pepperoni roasted Brussels sprouts and mushrooms that\u00a0I substituted for the menu listed mashed potatoes for $35. An excellent\u00a0choice as it turned out to be sitting outside in the patio on a nice cool\u00a0night. They do have plenty of outside heating, so no reason to go inside\u00a0in the smaller space for dining.<\/p>\n

My guest opted for the \u201cColumbia River Salmon,\u201d which again like almost\u00a0all of the dishes here is extremely creative in selecting the sides which in\u00a0This case with the salmon is Persimmon, grilled Japanese pumpkin and\u00a0Hen-of-the wood for $35. Next visit will see me trying the Hand Harvested\u00a0Scallops w\/Chinese black garlic, quinoa, fried rice and fresh edamame.<\/p>\n

The new wine program features all grower-producer wines and the staff\u00a0At Raymond 1886 have all had a major voice in the very avant-garde\u00a0selections. He has also ordered a change in the way that the wine is\u00a0poured at the table by showing the bottle to everyone at the table\u00a0instead of just the person who ordered it. That would include wines\u00a0such as the K.Ruprecht Riesling White \u201912 or the traditional Ch.Blaignan\u00a0Bordeaux Blend Red \u201912.<\/p>\n

When it comes to the new winter cocktails at Raymond 1886 then\u00a0all fourteen of the cocktails are priced at $14 and have been created by\u00a0a talented mixture of mixologists. I went for the Rhum creation of\u00a0\u201cThe Ice King\u2019\u201d a Julep variation with mint, Solerna Orange Liqueur\u00a0and a Clement Cane Sirop and all sprinkled w\/coffee grounds.\u00a0Excellent as was the \u201cHelen of Troy\u201d for the Pisco lovers, a shaken\u00a0cocktail that also had Mixed berry shrub, lemon, Falurnum and a\u00a0black sugar garnish.<\/p>\n
