Las Vegas (Perfect Meal Today) 10\/27\/20\/–After spending six months in Los Angeles without going to a restaurant a visit a few weeks go to CLEAVER in Las Vegas was a real treat, despite feeling very rusty concerning restaurant etiquette. From the outside about all you can see at the strip mall where the restaurant is located is an impressive looking sign, but inside the place then the multitude of cavernous rooms makes social distancing a piece of cake.<\/strong><\/p>\n

\u00a0<\/strong><\/p>\n

Cleaver opened in late 2018 and the night we were there, I noticed a constant flow of customers coming in during the evening indicating that Las Vegas is leading the way rightly or wrongly in the renaissance of the sit-down fancy restaurant. Cleaver bills itself a hand-crafted specialty cocktail and steak house, so a perfect kick off to the evenings gastronomic entertainment seemed like a half dozen raw oysters on the shell for me. My guest decided on the spicy mussels and was perfectly satisfied with his choice. The crispy sour dough bread was irresistible, so much so that I forgot any degree of common sense and had to order a second helping.<\/strong><\/p>\n

\u00a0\"\"<\/a><\/strong><\/p>\n

The steaks are from Nebraska but I still went fairly conservative with a 9 oz Fillet ($56) which I decided to have with their specialty crispy corn on the side. I always seem to go for the medium-rare variety and this version was just about right. Other steak offerings are a 14oz New York Strip, an 18oz Ribeye, a 60oz Ribeye, a 120oz Ribeye and a gargantuan 240oz Ribeye. Obviously, these larger steak packages are for larger parties than just a couple of people with the 60oz going for $210, and the other two for $390 and $7700 respectively. I have to assume that you will need to pre-order hese feasts prior to your arrival.<\/strong><\/p>\n

\u00a0\"\"<\/a><\/strong><\/p>\n

Other main courses include the Short Rib Gnocchi ($25) and the Mojo Pork Chop ($28) With black garlic beans, cilantro, lime and pickled onions. The Cherry Lamb Chop ($34) Is accompanied by a Scotch Herb Risotto, chorizo and preserved lemon which will be my choice next time I visit Cleaver.<\/strong><\/p>\n

I must not ignore some of the creative side dishes even though the crusty corn was a terrific choice. I hear from friends that the Pork Belly Mac & Cheese is a must go to choice at Cleaver, but I liked the look of the Pancetta Collard Greens and the Portobello Mushrooms. All sides are priced between $9-14 and are pretty good or sharing.<\/strong><\/p>\n

\"\"<\/a><\/p>\n

I also missed the Foie Gras ($19) this time around and will also be keen to try the old classic Shrimp Cocktail ($19) as well. The cocktails deserve a bigger mention than they will get here and it is all done by age and era with the Turn of the Century, Golden Age, Post War, European Influence and Gothic Age all getting their own little section. As I say it deserves a bit of study before ordering as does the food.<\/strong><\/p>\n

Enjoy Cleaver, a restaurant with no history but maybe a bright future.<\/strong><\/p>\n
