HOLLYWOOD (Perfect Meal Today) 10/30/17/–On October 17, 2017 “Princess Cruise Lines”invited media for a special evening of traditional pasta making and sampling the newly created menu by northern Italian Chef Angelo Auriana. The special hosted evening took place at the chic designed and eclectic downtown LA restaurant Officine Brera in the Arts distruct downtown location 1331 6th street . This large renovated downtown warehouse structure has a unique city vibe with international flare and continental food;
The diner was served family style to a large group of media in private dining room with inner view of lovely large restaurant. The food tasting totally delectable.The evening began with private pasta making demonstration from the master chef himself Chef Angelo Auriana. The high ceilings and bright large converted warehouse location perfect place for filming and Chef Auriana’s specialty food demonstrations;
Antipasto appetizers began with Villa Sandi Fresco Prosecco a subtle dry Sparkling Italian white Prosecco . Brandade pink snapper mousse,roasted red pepper olivata, grilled ciabatta,and vegan dish Farinate chickpea flour, garda olive oil, cracked pepper a lighly toasted(chickpea flour type pizza bread tasty vegan treat –
Primo -first course consisted of casarecce curly eggless buckwheat pasta foraged mushroom sugo, reggiano , gnocci piemontesi house made potato dumplings castelmagno fonduta
Il secondo – The second course started with wine from Toscany a 2015 Poggiotando Toscana IGT then several main courses were served to satisfy all palets a meat course; fish and vegan pasta ; the Italian version of a gourmet pot roast
1)Manzo all’olio slow braised beef shoulder root vegetables, anchovy oil ; Then a fish course pink snapper slow baked to perfection Dentice pink snapper fillets baked with artichoke hearts and cherry tomatoes and fingerling potatoes
2)A vegan dish homemade bread dumplings made into pasta dish pisarei e vedure; house made bread dumplings
3) Last but not least the Grande finally Dolce- Dessert served on a long dish filled with freshly made Italian style donuts balls ; Castagnole freshly fried donuts anise sugar and absolutely fabulous salty bourbon caramel sauce – delicious !!
The specialty restaurant Sabatini’s Italian Trattoria have been wining and dining millions of Princess Cruises Lines guests with traditional and innovative cuisine since its’ first debut aboard Grand Princess Lines in 1998. Almost 20 years later, Princess Cruises Lines unveiled a fleet wide enhancement to its signature restaurant in collaboration with acclaimed Italian Chef Angelo Auriana.
The new menu they are introducing with innovative design featuring antipasti and handmade pasta dishes from Chef Auriana, and family recipes curated from Italian “Princess Cruise Lines”executive chefs across the fleet.
Sabatini ItalianTrattoria debut aboard the Caribbean Princess Lines following a multi-million-dollar dry dock renovation and is renowned as one of the “Best Specialty Restaurants at Sea,” the Sabatini locations are on Caribbean Princess Lines and Grand Princess Lines and offer the new inspired menu, with the newly refreshed menu coming across the fleet in the coming months.
Chef Auriana, Executive Chef and partner at the authentic Italian restaurants, The Factory Kitchen and Officine BRERA, in Los Angeles, is inspired by fresh Northern Italian flavors and childhood roots from his hometown of Bergamo.
“Sabatini’s has always been a guest favorite and this new collaboration with Chef Auriana elevates our Italian heritage, continuing our fresh approach to authentic Italian dining,” said Mario Siebaldi, Princess Cruises Inees senior vice president guest operations. “Also featuring a beautifully transformed ambience, the new Sabatini’s Italian Trattoria will delight new and returning guests alike.”
Chef Auriana relies on using old world grains like buckwheat and durum that gives semolina the signature pale yellow color and high-protein strength necessary to hold the shape of house made pasta. Non-traditional ingredients—like mint and marjoram—are also infused to showcase Chef Auriana’s contemporary flair.
Chef Auriana’s explains “In my hometown of Bergamo, Italy, I was born with an appreciation for the beautiful flavors of Northern Italy that I love to incorporate into my cooking,” and further expressed he is pleased to share that appreciation through delicious new Sabatini’s menu items made fresh daily and served exclusively onboard Princess.
A superb all Italian wine menu, iconic Italian cocktails and Limoncello liqueurs are available to complement the menu. A $25 per person cover charge includes a four-course dinner, plus dessert.`
Sabatini’s Italian Trattoria also features pasta making classes for guests.
