Laguna Woods(Perfect Meal Today)1/25/15/–The recent passage of the law which mandates more humane treatment of chickens used in the production of eggs brings to the fore new questions and considerations for the consumer — to buy or not to buy. In my comparison-shopping I found the free range eggs to be about $1 per dozen higher than the supermarket brand eggs.
Producers of free range eggs tout benefits such as no pesticides, GMOs (genetically modified organisms), or antibiotics. Eggs from chickens raised with such amenities as nest boxes, perches, and scratching areas, and the all important law mandated minimum 2 square feet of outdoor space per chicken producers believe delivers a better tasting egg. The ability of the chicken to forage on the land and soak up the sunshine is also believed to be a contributing factor in the improved flavor.
So, back to the question of whether or not free range eggs are worth the increased cost; it is a decision the individual buyer will have to make. There are critics who don’t see the value. However judging by the increasing number of companies entering this market, more and more people seem to be thinking the eggs merit the increased cost.

For my personal Nest Fresh taste test I chose to make deviled eggs using the recipe I devised to satisfy my passion for pungent and salty flavors. Comments from three others who tasted this concoction seem to share that passion also.
Surf and Turf Deviled Eggs Recipe
Hard cook six Nest Fresh Eggs. My tried and true method to hard cook eggs is:
Place the eggs into a pan. Add enough (cold, from the tap) water to completely cover the eggs. Place the lid on the pan and bring the water to a rolling boil. Remove from the heat and let stand covered for 18 minutes.
Drain and remove the eggs from the pan, then place them into a bowl of cool water to stop the cooking process. This method produces a perfectly cooked egg without developing the black sulphur ring around the yolk that comes from overcooking eggs.
Cut each egg into half; remove the yolks and place them into a bowl. Mash the yolks while adding ½ to 1 mashed anchovy fillet, and salt, black pepper, mayonnaise and mustard to taste. Fill each egg with this mixture. Dust with paprika (and a little cayenne pepper, but only if you dare). Photography: Kay Schroeder
